Bacon Cheese Cookie.
This bacon cheese cookie recipe will have the troops wanting more. They go great with a savoury spread or just on there own, perfect for family and friends to have a get together as well. Another variation that's a winner is with smoked salmon and cream fraiche on them after they have cooled down, slice the smoke salmon in half and form a rosette and place on the cookie, top with a teaspoon of cream fraiche.
Ingredients: - 300g (10oz) of plain flour
- ¼ teaspoon of baking powder
- 225g (8oz) of unsalted butter
- ½ a cup of cooked bacon
- ½ a cup of grated tasty cheese
Method:
Preheat your oven to 175c (350f gas mark 4), cook your bacon till crisp then place on paper towel to dry out. Line your two baking sheets with parchment. Pour the flour, baking powder in the sifter and sift into a bowl, add the butter and rub it in till it resembles fine bread-crumbs. Know add the bacon and tasty cheese and work the mix till it comes together. Roll into small balls place the cookies onto the baking sheets and press them down with a fork, bake them for 8 - 10 minutes or until they are golden in colour. When there ready take out of the oven and put onto a wire rack to cool, these cookies will store in an airtight container for at least a week, if they last that long. This bacon and cheese cookie recipe will make about two dozen cookies.
