Blueberry pancake recipe one that is fluffy and has whole blueberry's in it, it's one of our favourite.
I love making blueberry pancakes than other pancakes, it's the way they turn out, big and fluffy with fresh blueberry's.
It all starts with a good mix, then adding fresh blueberries till just combined, it will always turn out the best pancake mix.
Making the best pancake mix is an easy process, you just mix the wet with the dry till just combined.
By over mixing the eggs become tough, if you just combined the mix together it will always turn out to be the fluffiest that you've made.
Ingredients:
2 cups of self raising flour
2 large eggs lightly beating
1 cup of milk
1 punnet blueberry's
nob of butter
a little oil
Method:
Sift the flour into a mixing bowl, this makes it lighter, with a fork mix the eggs and the milk carefully, just till combined.
Add the wet to the dry ingredients making sure you don't over mix, it will get tough, when mixed it should run of the fork thickish but not to thick.
Mix in the blueberry's carefully, then heat your pan on medium heat with the oil and butter in it till the butter is melted.
Take a tea cup or a ladle and fill half of it with the pancake mix pour it into the hot pan being careful.
Cook them till you see bubbles form on the top all over the pancake about 3 to 4 minutes depending how hot the pan is.
When you see that the bubbles have popped it's time turn them with a spatular being careful, see how it is golden brown on that side.
Now cook that side till you can lift up the pancake and see that it is golden brown on that side as well.
