A Carrot Muffin Recipe,
With Coriander And Chilli.

A flavoured carrot muffin recipe for breakfast that has coriander and chilli in them. You could leave the chilli out if you are not familiar with chilli's in the mornings. This muffin recipe has the benefits to lift your spirit's in ready for the day ahead.

Remember to just combine the mix and not to over mix it. These muffins are one of the easiest to make, usually about half an hour at the most, give about 20 minutes cooking time, the rest in preparation.

Breakfast can be artistically created in the kitchen which can have the ability to be quite sensual and fulfilling with warm aromas of muffins being baked throughout the house. How to do it yourself.

A carrot muffin recipe.

Ingredients:

  • 1 cup of wholemeal flour
  • 1 cup of plan flour
  • 4 teaspoons of baking powder
  • 1 teaspoon of salt
  • 125g (4ounces) of cream cheese
  • 2 eggs lightly beaten
  • 2 cups of grated carrot
  • ¼ cup of chopped fresh coriander
  • 1 ½ cups of milk
  • 1 ½ teaspoons of finely chopped chilli

Method:

Turn your oven onto 200c (400f Gas mark-6). Sift the flour, baking powder and salt into a bowl, rub the cream cheese into this till mixed together.

Mix together the carrot, coriander, eggs, milk, chilli, and pour into the dry ingredients, mix till just combined and then fill your greased muffin tray three quarters with the mix.

Bake for 15 to 20 minutes or until they spring back when touched. When finished this recipe will make 14 muffins.
