A Cheese Cookie Recipe
With Nuts.

A great cheese cookie recipe with nuts as a base for breakfast canapés where you could top them with just about anything that you like. Having these on hand is so convenient for when your friends pop over for breakfast.

An easy cookie recipe to make that has a lot of variations you could add as well.

A cheese and nut cookie recipe.

Ingredients:

  • 50g (2oz) of soft butter
  • 115g (4oz) of tasty cheddar cheese grated
  • 100g (3½oz) of plain flour
  • 1 cup of chopped nuts (none salted)
  • A pinch of cayenne pepper
  • A pinch of salt

Method:

In a bowl sift the flour, salt, cayenne pepper, in another bowl add the soft butter and the cheese, mix this well then add the flour and form a smooth dough.

Store the cheese cookie dough in cling wrap and roll it up to about 5cm (2in) thick log twisting the ends, place the dough in the fridge for 15 - 20 minutes to firm up.

Pre heat the oven to 175c (350f gas mark 4), know grab the dough out of the fridge and take the plastic off and slice it into 6mm (¼in) thick pieces and put onto the baking sheets.

Chop the nuts up and press them onto the cookie tops or you could mix them into the dough, bake for 10 to 20 minutes or until golden.

Tip, you could take the cookies out 2-3 minutes earlier for a softer type cookie, they are going to still cook when you take them out of the oven anyway.

Put them onto a wire rack to cool down, this cheese cookie recipe can be stored in an airtight container for 5 - 7 days, makes one dozen cookies.
