Over time you get to know how things work, this is one of those times that if you set your mind to it you'll end up the perfectionist. Remember this is a easy pancake recipe it will takes practise for your liking, you might not get it the first time you make flapjacks, but it will hit you. Ok, with the mix you just need to combined the ingredients together, they will turn out to be the best you've made over time. When you over beat eggs they tend to become tough little nuts, so in saying that, just mix the eggs with the milk till just combined. Some people like to mix a spoon of sugar into the mixture to make it sweeter, the fresh fruit should be sweet enough along with the maple syrup or what ever sweet things you put on top. A lot of people also mix melted butter into the recipe, this is to make the mixture thicker when it's refrigerated, prior making the pancakes. It is good practice when the mix is made to put it in the fridge for a least twenty minutes to settle down, this relaxers the flour.
Ingredients:
Method:Sift the flour into a mixing bowl, this makes it lighter, with a fork mix the eggs and the milk carefully, just till combined. Add the wet to the dry ingredients making sure you don't over mix, it will get tough, when mixed it should run of the fork thickish but not to thick.
Now, rest the mixture for twenty minutes in the fridge, at this stage you could get what ever you are going to put on them ready. Then heat your pan on medium heat with the oil and butter in it till the butter is melted, take a tea cup and fill half of it with the pancake mix.
Cook them till you see bubbles form on the top all over the pancake about 3 to 4 minutes depending how hot the pan is.
When you see that the bubbles have poped it's time turn them with a spatular being careful, see how it is golden brown on that side. Now cook that side till you can lift up the pancake and see that it is golden brown on that side as well Do the same with the rest of the mix till you have finished it off. There you go you have just made your first batch of breakfast pancakes. Congratulations. You can add anything you like to this easy pancake recipe as it is only a way for you to experiment with. So don’t be scared to try new things out as it will be an advantage for you, like I say, the more you practise at it, the better you are at it.
