Breakfast Smoothies.

Milk and dairy alternatives is a good way for people that have allergies such as eczema and asthma to make there own variation of milk.

Those allergies can be triggered be drinking cow's milk, the best way to get around this is to make your own.

You could buy some goat's milk, soya milk or rice milk in your local supermarket or health food shop, but why bother when you could make it fresh.

They will last in the fridge for 3 to 4 days, some a week, when your finished it's easy to make more and it will take you less then ten minutes.

If you like to make your own milk and dairy alternatives there are some great easy ways to do this, I have a few alternatives listed here for you to try out.

There especially good when your making breakfast smoothies, replacing the dairy product for fruit or nut milks, they add more flavour and texture to the perfect smoothie.

How to make Milk
from Fruit and Nuts,
Tasty and Simple.

Coconut milk
A great milk and dairy alternative for your breakfast smoothies. You could get this at the local supermarket or health food store, alternatively you could crack open a coconut shell and grate out it's flesh.

Ingredients:

  • 125ml (¼ pint) of coconut flesh
  • 2 to 3 drops of vanilla essence
  • 125ml (¼ pint) of boiling water

Method:

Place all of this into your blender and blend on low for around 20 seconds, slowly increase the speed to high for another 20 - 30 seconds, or till a smooth texture is formed.

Let it cool down then pop it into the fridge, use as a replacement for dairy products when making your breakfast smoothies.

This one is simple and easier, it's 75ml (2½floz) of dried grated coconut and the rest of the ingredients as above, follow the same method.

Soya milk and tofu
Soya beans are full of protein, they make products such as tofu, soya milk, cheese, yoghurt and soy sauce. It is the anticancer properties that we all love about soya beans.

Ingredients:

  • 50 to 125ml (1 - 4floz) of silken tofu

Method:

Add this amount to any breakfast smoothie that you wish, it's an alternative for yoghurt and milk.

Tofu works by making the smoothie thick and smooth, silken tofu does a better job although both work quit well.

Apricot milk and orange smoothie.

Apricot milk
Apricots, dates and figs can be made into a delicious and intensely flavoured milk alternative.

Well, it's not really milk in the sense, it's a great way to add excitement and class to a breakfast smoothie.

It's got to be one of the best milk and dairy alternatives that we've made to date, the sweet aromas of the apricot and the texture even looks great as well.

If the milk gets to thick add less apricots till the desired texture is to your liking.

Ingredients:

  • 125g (4oz) chopped dried apricots
  • 2 to 3 drops of vanilla essence
  • 500ml (1 pint) of boiling water

Method:

Place the apricots in your blender with the boiling water and blend on low for 30 seconds. Carefully increase the speed to high for another 30 seconds.

You might need to add another 250ml (½ pint) of boiling water and blend till a smooth texture is formed.

Add the vanilla essence and blend for another 20 seconds, when done, taste the apricot milk and add more vanilla if needed.

Be careful when adding the boiling water, we don't want you to get burnt know do we. When finished let it cool down, then refrigerate till needed, it will last about a week.

Almond milk
Almonds and other nuts like cashews, sunflower seeds can be made into a delicious tasty flavoured milk that goes so well as milk and dairy alternatives.

Brown skin nuts need to be soaked or blanched with water then rinsed, ready to be blended, this will bring out the intense flavour that is high in protein and calories.

The more water you put in a thin milk is produced, the less water, a thicker milk is produced. We use 1 part almonds, to 4 parts water, this works quite well as a milk and dairy alternative.

When your finished making the almond milk it needs to be strained, bottled and of cause put in the refrigerator, it will last up to 2 to 3 days.

A great milk and dairy alternative for your breakfast smoothies.

Ingredients:

  • 100g (4oz) blanched almonds
  • 1 tablespoon of honey
  • 200ml (7fl oz) of water
  • 3 to 4 ice cubes

Method:

Place the ice, almonds and honey into your blender, blend on medium till a smooth paste is formed, slowly add the water until the mix is a milky consistency.

Strain the milk through a muslin cloth or cheese cloth squeezing the last bit out.

Warning: if you are allergic to nuts, then this is not for you.
