Muesli for a healthy
breakfast.

Muesli the way to go

This muesli recipe has quit a lot of dried fruit in it but it’s everything you need for a healthy breakfast.

It will be quite a lot when made, but it will keep for a good week in an air tight container, you could always divide it up.

This recipe goes great with buttermilk, yoghurt and fresh fruit to top it off.

Ingredients:

  • 2 cups of Rolled Oats
  • 1 cup of Rice Bran
  • 2 cups of Bran Flakes
  • ¾ cup of Unprocessed Wheat Bran
  • 1 Tablespoon of Sesame Seeds
  • 2 Tablespoons of Slivered Almonds
  • ¾ cup of Shredded or flaked Coconut
  • 2 Tablespoons of Honey
  • 150 ml of Fresh Orange Juice
  • ½ cup of Apricots, chopped finely
  • ½ cup Sultanas
  • 6 pieces of Dried apple, chopped finely
  • 5 pieces of Dried mango, chopped finely
  • 5 pieces of Dried paw-paw, chopped finely
  • 6 pieces of Prunes, chopped finely

Method:

Turn your oven on to 150°C (238f). Combine the oats, rice bran, bran flakes, wheat bran, sesame seeds, slivered almonds, and the coconut in a bowl so you can mix it up really well.

Warm up the honey and the orange juice gently on a low heat, or twenty seconds in the microwave.

When the juice is warm, pour it over the dry ingredients that you have in the bowl, mix this part really well.

Place the mixture onto a baking tray lined with baking paper and bake for 25-30 minutes or until golden, stirring occasionally.

Let it cool down before mixing all the dried fruit. It can be stored in an airtight container when completely cold. This muesli recipe will go great just with the dry ingredients mix up and baked with the honey and orange juice.
