An Oatmeal Cookie Recipe.

This is quite a good oatmeal cookie recipe, you can have it with anything savoury especially if you have it as a breakfast cookie.

It goes very well with cheese platters, fruit, and eggs.

It's a bit tricky though, when you process the oats the texture you achieve, will determine the final texture of the cookie when baked.

It took us a few times to get it right, so be prepared for the challenge, drop us a line to tell us how you went with this cookie recipe.

An oatmeal cookie recipe.

Ingredients:

  • 2 cups of rolled oats
  • 200g of cold butter, (chopped in small pieces)
  • 150g of plain wholemeal flour
  • 50g of plain flour
  • 1 teaspoon of salt
  • ½ teaspoon of bicarbonate of soda
  • ¼ cup of brown sugar
  • 2 tablespoons of milk

Method:

Preheat the oven to 160c (325f gas mark 3).

Process the oats for about thirty seconds in a food processor or until It looks like oat-meal, add the chopped butter, wholemeal flour, plain flour, salt, bicarbonate of soda, and the brown sugar, don't add the milk at this stage.

Process further, till it looks like roughly chopped breadcrumbs.

Add the two tablespoons of milk and process more, until the mixture just begins to come all together. Take out of the processor and knead briefly until smooth.

Half the dough and roll each half between two sheets of parchment paper till about 3cm (1¼in) thick. Cut out the dough with a cookie cutter. Using a spatula carefully put the cut-outs on a greased baking tray or on a tray with parchment paper.

Place in the oven for 10-15 minutes or until they are golden brown, cool them off for about five minutes before placing them on a wire rack.

These oatmeal cookies will store in a airtight container for up to 7 days. This oatmeal cookie recipe will make about a dozen cookies, depending on how big you make them.
