The hotcake or better know as pancake, can be made up to accommodate any dish that your making for breakfast, it can be savoury or the sweet variety.

Potato pancake recipe with smoked salmon for breakfast.

Ingredients:

  • 5 large potato's peeled
  • 2 large eggs
  • 3 tablespoons of plain flour
  • 1 tablespoon of veg oil
  • 1 tablespoon of butter
  • 4 strips of bacon
  • 250g of smoke salmon sliced
  • 100g of crème fraiche (sour cream)
  • Shaved parmesan (sprinkle)
  • salt and pepper to taste
  • A heavy based pan
  • 1 bunch of chives cut fine

Method:

Wash and peel the potatoes then, grate them in a large bowl of cold water so they can soak, this gets out the excess starch.

After that rinse the potato's out and pat dry with a clean towel. Place them in a bowl and mix in the eggs, seasoning and a little parmesan and the flour.

Heat the heavy based pan on medium heat, add the oil and butter wait till all the butter is dissolved, then spoon the mixture in.

Press down lightly with a spatula and cook for 5 to 8 minutes or until they are brown on both sides, only turning once.

When there cooked (soft centered crispy crust) place the potato pancakes on a tray and pop them in the oven on 150c (302f) to keep warm.

While this is happening add the bacon to the pan and cook till crispy.

When done take the pancakes out of the oven and place the rest of the shaved parmesan on top and grill till brown.

When brown place on a plate and add the smoke salmon in rosettes on top, the bacon and a spoon full of crème fraiche (sour cream) garnished with the chopped chives.
