For the filo pastry, just follow the instructions on the pack. Make your pastry and rest it for a couple of hours in the fridge covered or make it the day before, other wise it will be tough. The less it is handled the better it will be, the more it is rested the better it will work for you. You will need a pie dish 20 cm (8 inches) in diameter and this has to be buttered well. When the pastry is ready roll it out to fit the pie dish and it should extend a little beyond the edge. Cook up some bacon and line the bottom of the pie dish with it. In a separate bowl crack four eggs and add two cups of thicken fresh cream and salt n pepper, and maybe a little crushed garlic. Mix this up quite well. Fill the crust with the mix then add two teaspoons of butter cut into small pieces around the pie dish. Cook in a moderate heated oven for 30 to 35 minutes or till set but wobbly and firm. Sometimes it's good to put in some grated tasty cheese in the mix for more flavour. There you go an easy to make Quiche Lorraine for breakfast.
